(Japanese Leek Pancakes)

Ingredients:
(Serves 4)

* 1 1/2 large Japanese leeks
* 4 ham slices
* salt
* pepper
* sesame oil

ingredients for dough

* 1 cup / 200ml hard flour
* 1 cup / 200ml plain flour
* 3/4 cup/ 150ml water

Method:

1. Shift the hard and plain flours into the bowl, and add the water a bit at a time.
Knead the dough until it becomes as soft as your earlobe.
Put and cover it with plastic wrap in the bowl, and let it stand for about 10 minutes.

2. In the meantime, chop up the Japanese leek and ham very finely.

3. Divide the dough in half, and spread it out dusting it lightly with flour and roll it out into 40cm by 25cm square.
Spread a little sesame oil over the surface, put on the ham and leek, and leave an edge of about 5 centimeters all around, and finally sprinkle on some salt and pepper.
Roll the dough up into a tube, and then roll the tube into a spiral.
Tuck the ends back into folds. Dust the dough again and flatten it with a rolling pin.

4. Heat some vegetable oil in a frying-pan, put in the dough, and brown it on both sides. Then add water and put on the lid.
When the water has evaporated, add a little sesame oil. Keep cooking until the dough becomes crispy.

5. Cut it into bite-size pieces.

6. Serve with a sauce made of soy sauce, vinegar, and chili oil.
